Another thing I made in the crockpot for Thanksgiving is mashed potatoes. The potatoes do all the cooking in the crockpot, then you have to take them out to mash them, etc. It was nice not heating up the kitchen with the stove top on.
Crockpot Mashed Potatoes
Ingredients:
5 lbs russet potatoes (or whatever potatoes you have on hand)
1/4 cup butter, cut in cubes
1 1/2 cups chicken stock
1-2 garlic cloves, minced
1/4 cup cream cheese
1/2 cup milk
1 1/4 cup sour cream
salt
pepper
Directions:
Peel and chop potatoes. Place in crockpot with butter and chicken stock. Cook on HIGH for 4 hours. Add garlic and cover for 30 minutes.
Mash potatoes and add cream cheese, sour cream, milk, salt and pepper to taste
